Cheeseburger Stuffed Zucchini Boats

By hollowing out zucchinis and stuffing it with a delicious ground beef mixture - you get an easy weeknight meal that is delicious and low in carbs!

Ingredients

  • 2 large zucchini, halved with middle removed
  • 1 lb ground beef
  • 3 oz cream cheese
  • 1/2 cup beef broth
  • 1 tbsp burger seasoning
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 2 tbsp dill relish
  • 1 tbsp worcestershire sauce
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375.

  2. In a skillet over medium heat, brown and drain ground beef.

  3. To the cooked ground beef, add in cream cheese, beef broth, all seasonings, ketchup, mustard, dill relish, worcestershire, and 1/2 cup of shredded cheddar cheese.

  4. Stir until well combined and let simmer for about 5 minutes or until the mixture thickens.

  5. Slice zucchini in half and scoop out the center of the zucchini.

  6. Place the zucchini boats on a baking sheet and fill them full of the cheeseburger mixture. Top with the remaining cheddar cheese.

  7. Bake for 20-25 minutes until the zucchini is tender and the cheese is golden.

  8. Serve immediately and enjoy.
