By hollowing out zucchinis and stuffing it with a delicious ground beef mixture - you get an easy weeknight meal that is delicious and low in carbs!
- 2 large zucchini, halved with middle removed
- 1 lb ground beef
- 3 oz cream cheese
- 1/2 cup beef broth
- 1 tbsp burger seasoning
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp ketchup
- 1 tbsp mustard
- 2 tbsp dill relish
- 1 tbsp worcestershire sauce
- 1 cup shredded cheddar cheese

Preheat oven to 375.

In a skillet over medium heat, brown and drain ground beef.

To the cooked ground beef, add in cream cheese, beef broth, all seasonings, ketchup, mustard, dill relish, worcestershire, and 1/2 cup of shredded cheddar cheese.

Stir until well combined and let simmer for about 5 minutes or until the mixture thickens.

Slice zucchini in half and scoop out the center of the zucchini.

Place the zucchini boats on a baking sheet and fill them full of the cheeseburger mixture. Top with the remaining cheddar cheese.

Bake for 20-25 minutes until the zucchini is tender and the cheese is golden.
