Ingredients
Fathead Dough
  • 10 oz Mozzarella Cheese, shredded
  • 5 oz Finely Ground Almond Flour
  • 1 tsp Baking Powder
  • 1 Egg
Cheeseburger Filling
  • 1 tbsp Butter
  • 1 Small Diced Onion
  • 1 lb Ground Beef
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/2 tsp Dried Parsley
  • 1/2 tsp Black Pepper
  • 10 Slices American Cheese
  • Sesame Seeds
Instructions
  1. Preheat Oven to 350 Degrees

Filling
  1. Add butter into a hot skillet and pour in the chopped onion. Cook for 5 minutes or until it begins to soften.

  2. Add in ground beef to onions. Season with garlic powder, pepper, dried parsley, and salt. Cook until meat is browned then drain. Set aside.

Fathead Dough
  1. Add mozzarella cheese into a microwave-safe bowl. Microwave in 30-second increments until cheese is completely melted. (Approximately 2 minutes)

  2. Add egg into melted cheese and mix well.

  3. Add almond flour and baking powder. Mix together then knead with hands until the dough is well combined. (Tip: wet your hands with water or olive oil if the dough is sticking to your hands)

Making the Cheeseburger Roll
  1. Layout a piece of parchment paper and spray a little olive oil on it to prevent sticking. Put fathead dough on parchment paper and flatten it into a large rectangle.

  2. Lay out cheese slices on top of the dough.

  3. Add ground meat mixture over the cheese slices.

  4. Carefully roll the fathead dough into a tight log. Pinch the ends to seal.

  5. Mix one egg and lightly brush the entire roll with the egg. Sprinkle sesame seeds over the top.

  6. Place in 350-degree oven for 20-30 minutes or until the dough is golden brown.

  7. Slice and enjoy!

I made this and it was such an easy recipe to follow . Even better, the finished product was incredibly yummy!! Instead of the dried parsley, I added a goodly amount of Italian seasoning. I also swapped out the American cheese with a layer of shredded Mexican blend cheese. Once out of the oven it was soooooooooo goood!! My only question for anyone who might be able to answer, would be what is the breakdown of the macros (fat, proteins, and carbs) for those of us trying to track our foods in a carb manager app.
