I don’t know about you, but I LOVE an easy egg bake that I can meal prep and eat throughout the week. This crustless quiche can be thrown together in about 5 minutes and you will have breakfast for the week!
What is really great about this recipe is you can customize it a million different ways to suit your tastebuds or to use what you have in your fridge! Instead of bacon you could add ham or crumbled breakfast sausage and feel free to try any cheese you have on hand. You can really add in just about anything your little heart desires.
I cooked my quiche in a pie pan, but feel free to use a small casserole dish if you don’t have a pie pan.
Keto Crustless Quiche
Quick and Easy Breakfast that is perfect for meal prep
- 1 1/4 cup Shredded Cheddar Cheese
- 5 slices Chopped Bacon
- 4.5 oz Can Diced Green Chilis
- 6 Eggs
- 1/2 cup Heavy Cream
- 1/2 tsp Salt
- 1/2 tsp Pepper
Preheat Oven to 400 degrees.
Grease a 9-inch pie pan.
Add 1 cup shredded cheese into the bottom of pie pan, top that with chopped bacon.
Add 1/2 a can of diced green chilis over the top.
In a bowl, whisk together eggs, heavy cream, salt, and pepper.
Pour egg mixture into the pie pan. Top with 1/4 cup shredded cheese.
Bake until the egg is cooked all the way through and is golden brown. Approximately 30 minutes.
Serve Immediately. Or store in fridge to eat throughout the week. (TIp: This will reheat well in the microwave or toaster oven)
